Tomato and Mozzarella Salad (from Sarah Manaresi’s Kitchen)
1 large tomato, any variety
1 fresh, large mozzarella ball
salt and pepper
good quality balsamic vinegar
fresh basil
Slice tomatoes into thick slices. Slice the mozzarella into thin slices. Starting with the tomato, layer tomato, salt, pepper, and cheese. Repeat. Top with fresh basil and drizzle with balsamic vinegar.
Tomato and Arugula Sauce (from Sarah Manaresi’s Kitchen)
1 15 oz. can of diced tomatoes
2 cups of fresh arugula
1 tsp. of butter
salt and pepper to taste
Melt the butter in a saucepan over medium heat. Add diced tomatoes and cook down for about 3 minutes. Add salt and pepper. Add arugula and cook until wilted, about 3 minutes. Serve immediately.
