Peanutty Peanut Butter Squares (adapted from FIXATE)

Nonstick cooking spray
1.5 all-natural smooth peanut butter
½ cup raw honey (or pure maple syrup)
2 tsp. pure vanilla extract
2 large eggs, at room temperature
½ tsp. baking soda, gluten-free

Preheat oven to 350 degrees.

Lightly coat 8×8 inch baking pan with spray. Set aside.
Combine peanut butter, honey, extract, eggs, and baking soda in a large bowl; mix well.
Evenly spread batter into prepared pan. Smooth top with a spatula.
Bake for 20-23 minutes. Squares may be a little soft when coming out of the oven, but they will continue to cook.
Cool. Cut into squares.

Chocolate, Peanut Butter, and Banana Quesadilla (picture and recipe adapted from Team Beachbody)

1 (6-inch) whole wheat tortilla
1 Tbsp. all-natural smooth peanut butter
½ large banana, thinly sliced
1 Tbsp. dark chocolate (or semi-sweet) morsels

Spread half of tortilla with peanut butter. Top peanut butter with banana and chocolate morsels. Fold tortilla in half; cook in medium nonstick skillet over medium-high heat, for 4 to 5 minutes, turning once, until chocolate is melted and tortilla is golden brown.
