Healthy Chex Mix (from Sarah Manaresi’s Kitchen)
1 tbsp of peanut butter
1 tsp of butter
1/8 of a tsp of honey
1/8 of a tsp of vanilla
1 cup of whole wheat Chex
Combine peanut butter and butter in the microwave for 20 seconds. Stir to blend. Add in honey and vanilla, and stir to blend. In a separate bowl, combine whole wheat Chex, pecans, and cacao nibs. Pour peanut butter mixture over and stir until coated. Pour out the Chex mix onto a piece of parchment paper and allow to dry before storing in an air tight container or ziploc bag.
Pumpkin Pie Oatmeal (from Sarah Manaresi’s Kitchen)
1 packet of Instant Irish Oatmeal (or any steel-cut variety)
1/2 cup of water
1 tbsp. of light almond milk
1 tbsp of pumpkin puree
Cook the instant oatmeal according to the directions on the box. Stir in the light almond milk and pumpkin puree. Add the toppings of your choice!
