Baked Chicken (from Sarah Manaresi’s Kitchen)

4 pound chicken
olive oil
salt
freshly ground pepper

Preheat oven to 350 degrees.

Rinse chicken and pat down chicken to remove excess water (if buying farm fresh or organic, check for feathers!). Lightly apply and rub oil all over the chicken, sprinkle with salt and pepper as well. Place in pan breast side up. Cook for 20 minutes per pound. Chicken is done when white meat reads 160 degrees and dark meat reads 180 degrees. Let rest for 10 minutes before carving.

BBQ Chicken Salad (from Sarah Manaresi’s Kitchen)

1 lb of cooked chicken
1/4 cup of your favorite BBQ sauce (or as much as you like your chicken saucy)
1 frozen bag of corn kernels
1 can of reduced sodium black beans
2 heads of romaine lettuce, chopped
2 tomatoes, chopped
Mexican cheese
lime juice

Cook the corn according to the directions. Heat the beans on the stovetop or in the microwave. In a skillet, warm the cooked chicken to your desired temperature. Add the BBQ sauce and mix. In a bowl, mix the romaine and tomatoes, and lime juice. Add cooked corn, beans, BBQ chicken, and cheese. Serve.
