Apple Chips (from Sarah Manaresi’s Kitchen)

2-4 apples of your favorite variety
cinnamon (Vietnamese is my favorite)
parchment paper

Preheat the oven to 275 degrees.

Slice the apples very thin, either with a knife or with a mandolin (use a metal glove!). Toss in cinnamon. Line a sheet pan with parchment paper. Spread out apple slices in one layer. Bake for 45 minutes and then flip over for another 45 minutes. Store in a ziplock bag or airtight container after completely cooled.

Apple Quesadillas (from Sarah Manaresi’s Kitchen)

2-4 apples of your favorite variety (Granny Smiths are my favorite for this)
corn or whole wheat tortillas
shredded cheddar cheese

Heat a small pan over medium heat.

Slice the apples very thin, either with a knife or with a mandolin (use a metal glove!). On one tortilla, layer cheddar cheese, then apples, and then cheddar cheese. Top with a tortilla. After the bottom cheese begins to melt and the tortilla starts to crisp, flip the quesadilla over. The quesadilla is done when all of the cheese is melted. Let sit for a minute to set. Slice and serve!
