It’s National Grilled Cheese Month! I’m super excited to be celebrating on FOX45/ABC22 in Dayton this morning by sharing a healthified version of grilled cheese. One of my favorite things is taking family favorites and putting a nutrition and delicious spin on it, and this sandwich is no exception. Plus, it uses a special tool–a waffle iron!

Can’t see the segment? No worries! I’ll be posting the video later today. In the meantime, be sure to try out this fabulous recipe!

Waffle Iron Turkey Melt Panini (adapted from Cooking Light)

4 turkey bacon slices
3 tablespoons mayonnaise
1 teaspoon Dijon mustard
8 slices of Klosterman organic whole wheat bread
8 ounces unsalted sliced deli turkey (such as Boar’s Head)
8 (1/8-inch-thick) slices tart apple (such as Granny Smith)
4 (1-ounce) slices Colby-Jack cheese
Cooking spray

Preheat a waffle iron to HIGH.

Cook turkey bacon to packaging instructions.

Combine mayonnaise and mustard in a small bowl. Spread about thin amount of the mayonnaise mixture over each bread slice. Divide bacon, turkey, apple slices, and cheese evenly among 4 bread slices; top with remaining bread slices, spread side down. Lightly coat both sides of sandwiches with cooking spray. Place 1 sandwich in each compartment of waffle iron; close waffle iron firmly on sandwiches. If needed, place a heavy skillet on top of waffle iron to help flatten sandwiches evenly. Cook 3 to 4 minutes or until golden brown and cheese melts.
