Russet or Sweet Potato French Fries (from Sarah Manaresi’s Kitchen)

3 large russet or large sweet potatoes
olive oil
salt
freshly grated parmesan cheese

Preheat the oven to 400 degrees.

Cut potatoes to desired size. Soak in cold water for about 10 minutes. Drain and pat dry. Toss in olive oil and salt. Bake for at least 30 minutes, checking every 15 for doneness. Turn every 15 minutes for even cooking.
