Summer Fruit Spritzer (from Sarah Manaresi’s Kitchen)
3 oz of 100% cranberry-pomegranate juice
3 oz of sparkling water
For ice cube trays:
1 container of fresh raspberries, rinsed
6 oz of 100% cranberry-pomegranate juice
Fill an ice cube tray with 2-3 raspberries in each compartment. Fill the rest of the compartments with juice. Freeze.
In a cup, combine 3 oz of juice and 3 oz of sparkling water. Add 2 fruit ice cubes each. Serve.
Virgin Strawberry Daiquiri (adapted from Dave Lieberman)
1 (14.5-ounce) can pineapple chunks in 100% juice
1 (12-ounce) bag frozen strawberries
1-2 teaspoons of unrefined coconut sugar
2 medium limes, juiced
Fresh strawberries, optional, for garnish
In a blender, combine pineapple, frozen strawberries, sugar, and lime juice and puree until smooth. Pour into glasses, garnish with fresh strawberries, if desired, and serve immediately.
