Bell Pepper Nachos (from Sarah Manaresi’s Kitchen)

4 bell peppers or 8 sweet baby peppers
4 slices of red onion
Olive Oil
1 pound of ground turkey
Taco Sauce
cheddar cheese

Preheat broiler.

Slice the peppers into pieces large enough to hold the ground turkey. Arrange peppers and red onions on a foil-lined sheet pan. Spray lightly with olive oil. Broil for 5-10 minutes (depending on how far away from the heat source the pan is).

Cook the ground turkey. Add in the taco sauce to desired amount. Continue to cook until the sauce is thick.

When the peppers are soft, pull out of the oven. Spoon the ground turkey onto the peppers and top with cheese. Put back under the broiler until the cheese is melted. Serve as nachos or add to your favorite salad.
