Tilapia (from Sarah Manaresi’s Kitchen)
4 tilapia fillets
salt
freshly ground pepper
flour
olive oil
Rinse the tilapia and pat dry. One one side, sprinkle with salt and pepper, then lightly rub with flour until coated. Shake excess flour off and flip over. Do the same on the other side.
On medium heat, spray fry pan lightly with olive oil. Place the fish in the pan with the thicker side in the center. Cook about 3 minutes per side, until cooked all the way through. Fish is done when it reaches 130-145F degrees.
Tilapia with Brown Butter and Toasted Almonds (from Sarah Manaresi’s Kitchen)
3 tablespoons of butter
2 tablespoons of sliced almonds
Over medium high heat, melt the butter until the butter begins to foam and turn brown. Add the almonds and toast until desired doneness. Spoon over tilapia from the recipe listed above.
