Avocado Breakfast Sandwich (from Sarah Manaresi’s Kitchen)
1 whole wheat English muffin, toasted
1 slice of turkey bacon, cooked
1 tsp of dijon mustard (optional)
1 over easy egg (or any egg preparation preference)
spinach
2-3 slices of avocado
1 slice of cheddar cheese (optional)
Layer all of the ingredients and serve.
Avocado Toast (adapted from Team Beachbody Blog)
1 medium avocado, mashed
paprika
salt and pepper to taste
4 whole wheat English muffins, toasted
Combine all of the ingredients. If the avocado isn’t soft enough, add greek plain yogurt to thin it out. Serve.
